Sodium Metabisulphite is a white crystalline powder that releases sulphur dioxide when it meets water or acid. Sodium metabisulfite therefore works as a preservative, antioxidant, bleaching agent and reducing agent. In food it carries the additive code E223.

Applications of Sodium Metabisulphite

Food and Beverages

Water Treatment

Textile and leather processors use it as a reducing and bleaching agent. Mining operations also use it in mineral flotation.

Safety and Handling

• Swallowing: Harmful if swallowed in concentrated form.
• Eye damage: Can cause serious eye damage. Wear chemical goggles.
• Toxic gas: Contact with acids releases toxic sulphur dioxide gas. Keep it away from acids.
• Sulphite sensitivity: Some people, particularly some asthmatics, react to sulphites. Follow food labelling rules in your market.
• Ventilation: Work in a well-ventilated area and avoid breathing dust.

Storage and Shelf Life

Store bags in a cool, dry place, away from heat and light, as the bag instructs. Keep them tightly closed, because moisture and air slowly reduce its strength. Moreover, store it away from acids and oxidising agents.

No. They are related compounds. Metabisulphite is the dry, stable form, and it forms bisulphite when dissolved in water.
